Commissary kitchen

A commissary kitchen is a licensed commercial kitchen that food vendors use to prepare and store food, wash equipment and dispose of waste. Health departments often require food trucks, carts and some event booths to use one. Many commissaries rent space by the hour or month.

Explained

About commissary kitchen.

Also called: commissary, shared commercial kitchen, commercial kitchen rental.

A commissary is different from a home kitchen under a cottage food law. It is inspected and meant for larger or higher-risk menus.

Some jurisdictions require a signed agreement or letter from the commissary as part of the permit application. Rules about overnight parking and water or waste service vary by place.

Organizers asking food vendors for permits should expect to see the commissary named on the application.
