How to start a night market.

To start a night market, secure a venue that allows evening events and food, check your city's special event and food permits early, recruit a mix of food and retail vendors, set booth fees from your costs, decide on free or ticketed entry, and plan lighting, power, trash and crowd flow for a few busy hours.

Step 1

Pick the venue and the night.

Night markets need lighting, power for food vendors, restrooms, trash service and room for lines. Parking lots, plazas, community centers and closed streets all work, but each needs different permits.

  • Check whether the venue allows evening events, amplified music and cooking.
  • Avoid dates that clash with big local events, unless you can ride their crowds.
  • For Ramadan night markets, plan around iftar and expect the busiest hours after it.
Step 2

Sort out permits early.

Public space and food mean permits. Start with your city or county's special event office, the health department for temporary food service, and fire safety for cooking and tents. Some take weeks or months.

Step 3

Recruit vendors.

  • Aim for a food-heavy mix with enough retail, art and activities to keep people walking.
  • Ask food vendors for their menu, health permit and power needs in the application.
  • Cap each food category so you don't end up with five of the same dish.
Step 4

Set booth fees and entry.

Start from your costs, not another market's price: venue, permits, rentals, security, marketing and staff, divided by the booths you expect to sell. Food vendors often pay more than retail because they use more space and power and usually sell more.

Free entry brings bigger crowds; a small entry fee or timed tickets help you plan capacity and cover costs. Free tickets still give you a headcount.

Step 5

Run the night.

  1. Send vendors load-in times, booth numbers and parking a few days before.
  2. Walk the layout before doors open: lines, exits, power and trash.
  3. Check attendees in at the entrance, and keep a vendor check-in sheet for load-in.
  4. After the night, thank vendors, share photos and announce the next date.
